红茶和绿茶的拼配。中国人说“红男绿女”。
从茶叶的配方来说，拼配茶就是组成伴侣。
新鲜的绿茶很容易氧化，一般春季采摘后，过一个夏天就会变滋味，到了九月，如果有红茶，可以以1：1的比例拼配。
红茶在发酵时，产生多种芳香类物质和氧化酶，可以在和绿茶混合后，抢夺氧气，这样绿茶就会保持新鲜。两者混合，有绿茶的新鲜，有红茶的馥郁芬芳，就像一对佳偶天成。而且，这样拼配后，就可以存放很多年不变质，就像爱情的滋味，愈久愈醇。
我们选取海拔600左右桂林的早春绿茶，以及云南1200海拔的红茶，两者拼配。
